I've been having a great time lately playing in the kitchen to compensate for not
being able to digest onions anymore. Some of these are original recipes of mine;
others are my adaptations of existing recipes.
ENTREES: VEGETARIAN AND VEGAN

African Yam and Peanut Stew
(vegan) (described by world-traveller Andy, on its premiere night, Sept 21,
2001, as "THE best vegetarian meal I have ever had, anywhere!")

Harvest Pumpkin Stew
(vegan) (served in a pumpkin -- I frequently make this for
Thanksgiving or Halloween)

Cottleston Pie
(vegetarian) (sort of based on shepherd's pie, but different)

Lentils and Couscous (vegan) (I was told, when I made
this for a largish group at an SCA event, "I have never liked lentils, but those
were great!")

Pastinaken (vegan) (a parsnip-based sauce is the key to
this dish, based on Lev's Austrian mother's lungenbraten; I make a similar sauce,
but vegan, and use TVP instead of the lungenbraten)

Lasagna (vegetarian) (hearty, yummy!)

Matzah Lasagna (vegetarian) (a Kosher-for-Passover
version of my lasagna)

Quinnchiladas (vegetarian) Quinn taught me to make enchiladas
that I actually like, so I name these after her; she also taught me to make
omelettes, but you can read about those on her site)

Vegan Lumpia (an adaptation of Marci's recipe; see
non-vegetarian section for that one)

Vegetarian Sausage Buns (kind of like hum bao, but not
really)

Vegetable Kugel (kosher for Passover; good all year
round!)

Apple Cinnamon Walnut Kugel (vegetarian) (kosher for
Passover; serve as a breakfast, dessert, or snack; uses leftover charoset!)

Mom's Charoset (vegan) (I guess I should include my
favorite charoset recipe if I'm telling you to use leftover charoset for the
kugel above... this is very simple and delicious)
ENTREES: NON-VEGETARIAN

Hazelnut-Crusted Halibut with Honey-Ginger Glaze (works
great with almonds if you can't find hazelnuts)

African Yam and Peanut Stew (more authentic version,
with chicken)

Fesenjun (Persian chicken, walnuts, and pomegranate
sauce)

Marci's Lumpia (my sister taught me how to make these
Filipino egg rolls, and we improvised this version together in July, 2001 --
yummy!)

Mom's Roasted Paprika Chicken, but not exactly the way
she made it (Note: Always make more than you need! You will want leftovers!)

Sopa de Pollo (use leftover Mom's Chicken!)

of her by her SCA name, Thomasina, or Tomi for short)
